Maltitol

Maltitol is a polyol that is stable to heat and acid. Liquid maltitol absorbs and releases moisture smoothly, and has good moisturizing properties. High-purity crystalline maltitol is hardly hygroscopic.

Properties

White crystalline powder or colorless transparent neutral viscous liquid.

Easily soluble in water, insoluble in methanol and ethanol, with moderate viscosity and boiling point.

The sweetness is 85-95% of that of sucrose, and the calorific value is only 5% of that of sucrose.

Application

Mainly used in chewing gum coating, sugar-free chocolate, sugar-free candy, baked food, ice cream and other products.

It can be used in food processing such as cold drinks, pastries, concentrated fruit juices, biscuits, bread, candies, and pickles.
